To make Cucumber Mint Slush in a slush machine, blend vodka, agave syrup, fresh lime juice, pour the mix into the machine and run the Frozen Cocktail program for about 20–25 minutes. Machine program: Frozen Cocktail
Pour the mix in at room temperature or chilled — no ice needed. Select the program and let the machine work until the texture is right.
Batch size
Step 1
Blend the fruit and any fresh herbs with the liquid ingredients until completely smooth, then strain through a fine sieve to remove seeds, skins and fibres — solids will clog a slush machine.
Step 2
Pour the strained mixture into the machine's container — do not add ice cubes, the machine freezes the liquid itself.
Step 3
Select the Frozen Cocktail program and let it run until it reaches a smooth, scoopable slush consistency.
Step 4
Serve straight away for the best texture.
Freeze times vary with starting temperature — check at the first beep and give it 5 more minutes if it's still loose.
No slush machine? Add about 1 kg (8 cups) of ice and blend in batches until smooth.
